Chicken and Broccoli Stir-Fry
For a delicious and easy dinner break out the broccoli and chicken for a stir fry.
CHICKEN AND BROCCOLI STIR-FRY
Serves 4
Prep/cooking time: Approximately 30 minutes
Ingredients:
3 tbsp. light soy sauce
1 tbsp. honey
2 tsp. lemon juice
2 tbsp. sesame oil
1 tbsp. cornstarch or flour
2 tsp. sesame seeds
1 tbsp. extra-virgin olive oil
1°⁄˝ lbs. chicken breast filets, cubed 1 medium onion, coarsely chopped 1 (1-inch) ginger root, peeled and
finely chopped
2 cups broccoli florets
°⁄˝ tsp. black pepper
Directions:
Combine soy sauce, honey, lemon juice, sesame oil, and cornstarch, set aside. In a large skillet, toast sesame seeds over medium heat for approximately
2 minutes, remove from skillet and set aside. Using the same skillet, add olive oil, turn to medium heat and cook chicken until lightly browned. Add onions, ginger, broccoli, and pepper, sauté for 3½ – 4 minutes. Reduce heat to medium-low, add liquid mixture and toss to combine. Cook until sauce is desired thickness. Top with toasted sesame seeds and serve. Enjoy with brown rice or quinoa.
