Lemon-Blueberry Chia Pudding

This is a kid pleaser and healthy too.

Serves 4
Prep time:10 minutes


1 cup coconut milk

¼ cup chia seeds

2 tbsp. maple syrup

2 cups blueberries

1 lemon, zested and juiced


In a medium mixing bowl, thoroughly combine coconut milk, chia seeds, maple syrup, and lemon juice.  Divide one cup of blueberries into four small serving dishes. Pour the liquid in the bowl over the top of the blueberries, dividing evenly in each dish, refrigerate overnight. Top each dish with the rest of the blueberries and sprinkle with lemon zest.  Refrigerate until serving.
