Ingredients:
\n4 large sweet potatoes, sliced
\n3 medium pears, cored and
\ncut in \u00bc-in-thick slices
\n2 tbsp. unsalted butter, melted
\n6 sprigs fresh thyme, leaves only
\nSalt and pepper to taste
\n1 tsp. sherry vinegar
\n2 oz. bleu cheese, crumbled<\/p>\n
Directions:
\n1. Preheat oven to 350\u00b0F. Combine potatoes and pears in ovenproof skillet.
\nPour butter over potatoes, sprinkle with thyme leaves, and season with salt and pepper;
\ntoss to combine.
\n2. Transfer to oven; bake until potatoes are tender, gently stirring once, 25-30 minutes.
\n3. Remove from oven, drizzle with vinegar and sprinkle with cheese; stir to combine.
