Fun facts
– Although “yams” and “sweet potatoes” are used interchangeably in the U.S., yams are technically different than sweet potatoes and have bark-like skin that is too difficult to peel with most standard vegetable peelers. True yams are not sold at most U.S. grocery stores.
– The United States Department of Agriculture (USDA) requires that products labeled as “yam” must also contain the term “sweet potato.”
– Vardaman, Mississippi, is known as the “sweet potato capital of the world.”
